| Six Weeks .....and the gardens are starting to produce. Just today we took our wagon out to the fields and picked a load of delicious fresh corn. Gma Mary is going to make a corn pie. Boy is that ever yummy. The recipe is listed at the bottom of the page. It's an original and a family favorite. When Max's brother Jack comes to get him, he expects to have a big piece! Whatta guy! |
| Corn Pie One recipe for a two crust pie (no sugar) Enough fresh corn cut off the cob to fill the bottom (crusted) pan Salt & pepper to taste Add one stick of butter (yippee from Paula Deen!) to corn Cover with top crust (made beautiful with artistically cut steam holes) Bake 400 degrees for 12 mins to set crust Continue baking at 350 degrees for 50 mins or until steam comes out the holes and the crust is golden. It's now ready to serve! Note: do not add any liquids. Corn steams in it's own juice & butter. Variation: Add fresh sea food to corn mixture. Bake as above.
